Castle Creek Winery Food & Wine Pairing Dinner
October 27th, 2014, three seatings: 6:30, 7:00 & 7:30
Rosemary Flat Bread with Sundried Tomato Relish and Ricotta
Paired with Outlaw Red
“Outlaw Red” is a bold no nonsense red table wine much like a noble cabernet. It is in perfect harmony with a smooth elegant finish. A deep colored wine, with a bouquet of spice and black pepper undertones. Flavors of dark fruits and plums blend with the firm texture and mature, balanced tannins. Pair well with grilled meats and Italian food.
Coconut Curry Butternut Squash Soup with Toasted Pepitas
Paired with Castle Creek Chardonnay
Castle Creek Chardonnay is the most noble and successful white wine grape in the world. It has evolved into the dominant grape for premium California white wines often yielding big, rich wines of intense flavor and complexity. Castle Creek Chardonnay is a medium gold color with a subtle light fruit and citrus bouquet. The fruit is completely unmasked and the flavor profile focuses immediately on green apple and ripe pear then finishes crisp and dry. This is a great value wine, perfect for summers best fare-think grilled chicken or salmon, salads or even consider a curry dish.
First Entree Course
Pan-Seared True Cod
Pistachio Relish & Arugula
Paired with Lily Rose White
Castle Creek “Lily Rose White” is a light fruity easy drinking white table wine. It is golden straw in color, with hints of apples, pears, cinnamon and honey. It serves well with seasoned poultry, fish, salads, pasta, fruits and cheeses.
Second Entree Course
Slow Braised Buffalo Short Ribs
Shallot Mash Potatoes
Paired with Castle Creek Cabernet Sauvignon
This high quality Cabernet has been produced from select grapes with high sugar content. With more than 300 sunny days per year and high elevations of the hills near Moab Utah, along with our long tradition in winemaking, we have produced an evolved Cabernet Sauvignon. The palate is intense, fruity, spicy and more advanced than you’d expect! Medium Tannins and American oak complete this full flavored Castle Creek red.
Ginger Snap Crust and Candied Pecans
Paired with Castle Creek Late Harvest Gewurztraminer
The delightful aromas of rose petals and honeysuckle combined with Gewurztraminer spice and the richness of freshly harvested grapes produce a truly succulent after dinner treat. Our late harvest Gewurztraminer has the low alcohol and high residual sugar levels of a true dessert wine but can also be enjoyed as an aperitif.
