Brut-It’s crisp and dry, nutty and toasty and bursts with citrus-pear scents and flavors enlivened with a hint of almond, all set in a moderately lush texture.
Chili Lime Crab Salad w/ Avocado Vinaigrette
Paired with 2008 Trebbiano
Some grapes are not expected to produce great wines, but are most often grown to supplement or support other wines. Some grapes may falter and fail in one terroir but thrive in others. Our Trebbiano d’Abruzzo is such a grape. Seldom is this grape expected to produce fine wines, but as is evident at our vineyard this grape can produce fine balanced wines that can stand with many of the better known wines such as Chardonnay and Sauvignon Blanc while maintaining its own distinctive personality. This grape is the one and only white wine offering we have.

Wasabi Panko Crusted Mahi-Mahi
Lemon Buerre Blanc, Mango Salsa & Black Rice
Paired with 2009 Interpretation
This wine is our homage to those wonderful rich wines of the Rhone which are based on the Grenache and Mourvedre grapes. Our inclusion of a touch of Petite Sirah adds an intriguing layer of nuance to this style of wine. The growth season of 2007 allowed for full flavor and aroma development of the grapes in this blend which leads to a perfectly balanced wine.
Second Entree Course
Saffron Risotto & Red Wine Reduction
Paired with 2007 Zinergy
Just bottled in July. Will be ready for release in October. This version of Zinergy is our most elegant to-date. We had the best harvest conditions ever for the grapes that make up this blend. That favor from Mother Nature fosters the most balanced of wines.
Mascarpone Cheese and Black Berry Compote
Paired with 2005 Zinergy
This wine is an unparalleled blending of grapes that are known to have a synergy. In this instance the whole is definitely greater than the sum of its parts. Zinfandel dominates the blend with a healthy dose of Petit Sirah to add richness and body. Those two grapes are known to work well with each other, but when you add to the mix a dash of Grenache for the glorious aromatics suggesting cherry and strawberry you have one of the most memorable wines you can put on your table or in your library. Because of the way this wine was grown and handled it has great potential for aging yet is ready for your table today. Lay a Zinergy down and will only get better over the next 5 to 10 years. Zinergy is our flagship wine.
